Postpartum Recipes - Vanilla Coconut Haystacks 

These are a brilliant postpartum snack. Packed with protein and healthy fats. 

To make these you’ll whisk up six whites with some salt. 

Then add in unsweetened coconut, honey and vanilla extract.  

Shape into balls and bake in the oven for around 8 - 12 minutes.

Ingredients 

  • 6 large egg whites 

  • 1/2 tsp sea salt

  • 385g unsweetened coconut  

  • 120ml honey 

  • 2 tbsp vanilla extract 

Whisk the eggs with the salt until stiff peaks form, mix in all other ingredients. Shape into balls and bake in the oven for around 8-12 mins (until golden) at 175 degrees.
